Instructions
Line a baking sheet with parchment paper.
Whisk the yogurt, protein powder, sweetener, and vanilla together until completely smooth, this will thicken up as the protein powder absorbs, whisk until no dry streaks remain.
Spread the mixture evenly onto the parchment, about 1/4 inch thick.
Scatter the crushed cookies evenly over the top and press in lightly.
Drizzle the melted chocolate over everything.
Freeze for at least 3 hours, or until solid all the way through.
Break into pieces and serve straight from the freezer.
