Some nights the craving is specifically for cookie dough and nothing else will do, so I keep this ratio memorized. It takes about five minutes, fits in one small bowl, and does not leave a whole batch sitting around tempting me for a week.
Oat flour instead of raw wheat flour and no egg means it is genuinely safe to eat straight from the bowl, which is really the whole point of cookie dough anyway. A splash of milk at the end brings it back together if it looks a little dry.
Edible-safe cookie dough for one, ready in about five minutes in a single small bowl, for when only cookie dough will do.

Scaled from the original recipe. Unnumbered amounts (a pinch, a splash) don’t change, and nutrition stays per serving.
Instructions
In a small bowl, whisk the oat flour, PB2, allulose, baking soda, and salt together.
Add the applesauce and vanilla extract, then stir until combined. Add the milk 1 teaspoon at a time until the dough comes together, soft but not sticky.
Fold in the mini chocolate chips.
Eat right away with a spoon, or chill for 10 minutes for a firmer texture.

Tips & swaps
PB2 is what keeps this under 150 calories without tasting thin, real peanut butter would add another 80 or so calories for the same amount of flavor.
Eat it straight from the bowl with a spoon, or chill 10 minutes if you want a firmer, more scoopable texture.
The pinch of baking soda is optional but it is what gives cookie dough that specific tangy flavor you are probably craving, do not skip it if you have it.
This is sized for one on purpose and does not keep well overnight, the applesauce makes it weep a little as it sits.
