Instructions
Add the almonds to a food processor and pulse until they form a coarse, sandy crumb, not a butter.
Add the pitted dates, 1/4 cup of the shredded coconut, almond butter, cinnamon, and salt. Process until the mixture clumps together and looks like a sticky, coarse dough, scraping down the sides as needed.
If the dough feels too dry to hold together, add the water 1 teaspoon at a time and pulse again.
Roll the dough into 14 balls, about 1 tablespoon each. Roll each ball in the remaining shredded coconut to coat.
Chill for 20 to 30 minutes to firm up before eating.
